NACC Chef of the Year Finalist, Dawn Brown, will take to the stage to demo a plant-based, nutrient-dense lunch menu which challenges the notion of traditional British cuisine in a changing multi-cultural elderly population. Her session will also look at budget control and making the most of fresh and dry store ingredients whilst producing this menu on mass. Dawn will also cover tips for advanced prep and adaptations for modified diets.
